Accomplished

Today is an accomplished day. I never thought that I could prepare and cook dishes that I've never cooked before. Dishes that I only see my mother doing when I was young and thought that could be very hard for me to do.

For our snacks, I cooked "Biko" a Filipino delicacy made of glutinous rice, coconut milk and brown sugar. I topped it with latik and sprinkled crushed peanuts. The husband and the little lady said, "yummy!".



And for our dinner, I prepared "Kare-kare" (viand in peanut sauce) using Ox Tail. This is my first time to cook Kare-kare and even I was surprised that I was actually cooking it and not just eating. It's an accomplishment for me, hehe.

Now that the husband is here I'll continue cooking special recipes, because when he returns to work abroad it would be me and my daughter again. It means, back to simple dishes for two persons :)

Naku sis, hindi. Ang dali lang pala niya lutuin. Hindi mahirap lalo na pag maraming coconut milk. What I did, I cook the rice yung normal cooking tapos I set aside. Tapos ginawa ko na yung coco milk and sugar mixture nung medyo sticky na saka ko nilagay yung cooked rice. :)
